Smooth Chocolate Mousse

Ingrédients
- 120g of dark chocolate, melted and slightly cooled
- 120 ml of very cold liquid cream
- 1 egg
- 1 tsp of sugar (optional)
Instructions
- Melt the chocolate gently and then let it cool down (it should not be hot).
- Pour the cream into the blender, add the melted chocolate, the egg and the sugar if used.
- Blend through a full cycle until you achieve a smooth, shiny, and homogeneous texture.
- Pour the mousse into two verrines or dessert glasses.
- Place in the refrigerator for 2 to 3 hours to allow the mousse to set naturally. Serve chilled.

Vanilla & Red Berry Cheesecake Cream

Ingrédients
- 120 g cream cheese, softened
- 100 ml of cold liquid cream
- 80g of red berries (fresh or frozen)
- 1 c. à café d’extrait de vanille
- 1 tablespoon of sugar or honey
Instructions
- Take the cream cheese out of the refrigerator 10 minutes before use.
- Pour the cream into the blender, then add the cream cheese, vanilla, sugar or honey, and finally the red berries.
- Blend for 1 full cycle until a smooth and homogeneous texture is achieved.
- If necessary, gently shake the blender to loosen the cheese from the sides.
- Pour the cream into small glasses. Place in the refrigerator for 1 to 2 hours before serving.

Instructions

Belgian Caramel & Speculoos Milkshake

Ingrédients
- 250 ml of cold milk (whole or semi-skimmed)
- 120g of vanilla ice cream
- 3 speculoos biscuits
- 1 tablespoon of speculoos spread
- 1 tsp caramel
Instructions
- Add the ingredients in the following order: milk → ice cream → biscuits → speculoos spread → caramel.
- Close the lid and blend for 1 to 2 full cycles, holding the blender slightly tilted (30–45°).
- If the mixture is very thick, shake gently while mixing.
- As a last resort, briefly use the reverse method (2–3 seconds) then turn the blender right side up.
- Pour into a tall glass and serve immediately.
